So, anyways.. I'm making dinner. I improvised! Whee! Chicken breast with italian bread crumb coating over stuffing topped with just a hint of gravy.. mmm.. gravy...
Okay, so here's the recipe.. since I just made it up, I don't know exact cooking time, so I'm guessing approximately 45 minutes at 350? Just check it to be sure it isn't burning or raw. ^.^ Edit: According to some sources of mine, it can take anywhere between 45 minutes to an hour and ten minutes, depending on your oven... and 375 degrees instead of 350 seems to be popular. Some people say don't cook the stuffing, just mix it with water or whatever your particular brand calls for and set aside while prepping the chicken. It's up to you. Personally, I cook it so's when I bake my dish I get this nice mix of soft stuffing and crunchy stuffing.. mm..
1 lb boneless skinless chicken breasts, cut to fit in an 8x8 baking dish stovetop stuffing mix, chicken or turkey flavor about 2 cups of seasoned bread crumbs 1 egg 1 package of gravy mix, or about a cup of bottled gravy, chicken or turkey flavor as well
Okay.. whatcha do..
1.prepare stuffing mix as directed and spread evenly in an 8x8 glass baking dish coated with Pam or similar cooking spray. (butter works too if you don't get nonstick spray).
2. Clean the chicken breasts, i.e. trim off excess fat. Beat the egg in a shallow dish, spread bread crumbs out on a dry plate. Take the chicken, coat it in egg, then roll in the crumbs. Set atop the stuffing in the baking dish.
3. Bake until chicken is done, again probably about 45 minutes-1 hr. 10 min. at 375. Prepare gravy mix as package directs. Pour desired amount of gravy lightly over chicken pieces and put back in oven for around 10-15 minutes, until gravy is mostly absorbed, and again, not burnt.
4. Take out of oven and allow to cool for several minutes before serving. In lieu of the Mc Donald's woman vs cup of coffee lawsuit, I will put this warning: CONTENTS MAY BE HOT! lol... serve with additional gravy, if desired.
So there you have it.. what I spend my day doing.. hehe..
